Hollowbrook has been a working property for a century and still is — there are cattle on the far paddocks, an orchard that produces more than anyone can use, and a creek along the bottom boundary that runs most of the year.
The cottages were farm buildings first. A dairy, a stable block, and the house at the top of the orchard. Converting them meant keeping the parts that made them worth keeping — thick walls, big openings, concrete and stone floors — and being honest about the rest.
There is plenty to do. None of it is compulsory.
Trails from the back gate, a dam worth taking a boat to, a dozen cellar doors within half an hour, and a pub that does one thing properly.
